We had been talking about opening our own food business for years while we worked together at Smugglers Notch Resort. Luck would have it, in 2020 just as covid was ravaging the restaurant industry and jobs were not very secure, we found a food truck online, an 1970's Winnebago that had been converted into a food truck. We knew instantly that she was the one and named her “Bertha”.
We researched food that we didn’t have in our area (Lamoille County) and the broader area of Vermont. We found there weren’t very many dessert food truck options, except Ice cream or baked goods. There were even less options for dessert food truck options for people with food allergies. Thus, the Waffle Wagon was conceptualized.
We tried many different recipes, and ingredients, and are proud to say that we use quality flour from King Arthur Baking Company for our Belgian waffles and their gluten free flour for our allergen friendly waffles. We use maple syrup from JJ’s Maple, located in Johnson. Vermont. Berries from Wandering Roots farm, located in Fletcher, Vermont. We love keeping it local, because they are neighbors and friends, but also have some of the best products out there. Last year we found the consensus was that people wanted more savory options, along with sweet options. We experimented A LOT!! And received great feedback, and our cornbread waffle was a winner, and now a staple on our new menu.
This year we want to bring our Vermont Waffle Experience to more people and have them experience joy in their food.
